Nothing helps warm up a cold winter night quite like freshly baked foods! In this blog post we will teach you how to bake two of our favorite healthy winter treats. Before starting, be sure you have measuring cups, a large mixing bowl, a non stick baking pan or cooking spray, and a blender or whisk. Finally, always read the whole recipe before you get started making it!

Cranberry Nut Bread

This recipe serves about 10 people and costs around $12 to make.

Step 1: Measure out your flour, sugar, baking powder and baking soda. Try substituting white flour for whole wheat flour to add a bit more fiber. Make sure you have your cranberries, eggs (or egg whites to cut out some cholesterol), walnuts and any other ingredients ready to go as well.

Step 2: Preheat your oven to 350F. While you’re waiting for your oven to heat up, blend your orange juice, butter, and egg whites in one bowl. In another bowl mix your flour, sugar, baking powder and baking soda together. After you have both mixtures ready, combine them and then add your cranberries and walnuts.

Step 3: Grease the bottom of the pan, making sure it is completely covered - don’t be shy! Then pour your batter into the pan.

Step 4: Place your pan in the middle of your oven’s baking rack and let it bake for 50-60 minutes. For a softer crust bake it for closer to the 50 minute mark and for a toasted crust bake it closer to 60 minutes. To check if your bread has baked, insert a toothpick deep into the bread and then pull it back out. If the toothpick comes out dry and clean then your bread is done. If it comes out wet or sticky your bread may need to bake longer.

Step 5: After removing your bread from the oven let it cool off for about 10 minutes. Slide it carefully out of your pan, slice it with a bread knife, and enjoy it with a cup of hot tea!

 

Cranberry Pumpkin Muffins

This next recipe follows many of the same steps as the first and even uses a lot of the same ingredients! It also adds canned pumpkin and applesauce into the mix which combined give you added vitamin A and vitamin C. To find this recipe’s full ingredient list, click here.

This recipe serves about 12 people and costs around $10 to make. Make sure you have a muffin pan and muffin cup liners before starting this recipe.

Step 1: Measure out all of the ingredients you need for this recipe. Your whole wheat flour, sugar, salt, cinnamon, applesauce, baking powder and applesauce should be measured out before you get too far in the recipe so you don’t get halfway through and realize you’re missing something important. Make sure you have your cranberries, eggs (or egg whites to cut out some cholesterol) and any other ingredients ready to go as well.

Step 2: Preheat your oven to 400F. While you’re waiting for your oven to heat up, blend your applesauce, pumpkin and egg whites in one bowl. In another bowl mix your flour, sugar, baking powder and spices together. After you have both mixtures ready, combine them and afterward add your cranberries to the mix.

Step 3: Place your paper muffin cups into your muffin pan and with a spoon, fill each cup up about halfway with your batter. Remember that your batter will rise while it bakes so filling your cups all the way could cause your muffins to overflow out of their cups.

Step 4: Place your muffin pan in the middle of your oven rack and let it bake for 15-20 minutes. To check if your muffins are done, insert a toothpick deep into one of them and then pull it back out. If the toothpick comes out dry and clean then you’re done! If it comes out wet or sticky it may need to bake longer.

Step 5: After removing your muffins from the oven let them cool off for a few minutes, and enjoy!
