Claire Russo is a SNAP-Ed educator at the Lawrence office of the UMass Extension Nutrition Education Program, where she has worked since the fall of 2019. The most rewarding aspect of being a SNAP-Ed educator is seeing how excited students are to learn about nutrition. Claire also enjoys making learning fun, engaging and memorable for students.
When not working, Claire enjoys reading, photography, swimming and spending time outside hiking and exploring local beaches. Claire's favorite food is a perfectly ripe avocado. Her favorite recipe to make with avocado is a black bean and corn salad with cilantro-lime dressing.
Prior to her work with UMass Extension, Claire worked in environmental education. This experience influences her style as a SNAP-Ed educator. Personal interest in nutrition prompted her to change careers, complete graduate school, become a registered dietitian and led to her current work with UMass Extension.
